In a document in review mode, e.g. after saving that document, select the 'schedule publication (request)' action at the top to request that the document be published. A window will popup where you can schedule at what date and time you want the publication to occur.

The editor will be notified and accept or reject your request.

Note that the editor can publish or take offline documents without your request. See editor actions.
